{"id":82,"date":"2011-11-13T09:18:47","date_gmt":"2011-11-13T15:18:47","guid":{"rendered":"http:\/\/blog.thekarmafarmer.com\/?p=82"},"modified":"2011-11-13T09:18:47","modified_gmt":"2011-11-13T15:18:47","slug":"the-karma-farmers-chili-con-carne","status":"publish","type":"post","link":"http:\/\/blog.thekarmafarmer.com\/?p=82","title":{"rendered":"The Karma Farmer&#8217;s Chili Con Carne"},"content":{"rendered":"<p>This is my favorite chili recipe of all time.\u00a0 It&#8217;s best served with crackers and a big glass of milk, but won&#8217;t disappoint in Frito Pie, Chili Dogs, or Chili Mac.<\/p>\n<p>There are no beans in this chili.\u00a0 If you like beans in your chili, add them.\u00a0 I won&#8217;t be offended.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>5 lbs. coarse ground chuck (80% lean)<\/li>\n<li>2 c diced yellow onion<\/li>\n<li>1 c diced celery<\/li>\n<li>1 can stewed tomatoes, diced<\/li>\n<li>2 green peppers, diced<\/li>\n<li>2 jalapenos, diced<\/li>\n<li>8 cloves garlic, crushed<\/li>\n<li>2 T. Tabasco sauce<\/li>\n<li>2 T worcestershire suce<\/li>\n<li>1 12 oz. can of your favorite American beer (don&#8217;t get all German lager on me, here)<\/li>\n<li>1 6 oz. can tomato paste<\/li>\n<li>8 T. good quality chili powder<\/li>\n<li>1 tsp. ground cumin<\/li>\n<li>2 tsp. salt<\/li>\n<li>1 tsp. cayenne pepper<\/li>\n<li>4 c. water<\/li>\n<\/ul>\n<p>Brown ground beef in large stock pot.\u00a0 Drain well into colander.\u00a0 Add onion, celery, green pepper, jalapeno, garlic and tomato paste, and cook for 3 minutes over medium heat.\u00a0 Add beer and use to deglaze the bits on the bottom.\u00a0 Return meat to pot.<\/p>\n<p>In separate bowl, mix chili powder, cumin, cayenne and salt.\u00a0 Add to pot and stir to combine.\u00a0 Add water, worcestershire, Tabasco, and stewed tomatoes.\u00a0 Cook and simmer over low heat until reduced to desired consistency, at least an hour.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is my favorite chili recipe of all time.\u00a0 It&#8217;s best served with crackers and a big glass of milk, but won&#8217;t disappoint in Frito Pie, Chili Dogs, or Chili Mac.
