{"id":79,"date":"2011-11-13T09:02:35","date_gmt":"2011-11-13T15:02:35","guid":{"rendered":"http:\/\/blog.thekarmafarmer.com\/?p=79"},"modified":"2011-11-13T09:02:35","modified_gmt":"2011-11-13T15:02:35","slug":"broccoli-salad","status":"publish","type":"post","link":"http:\/\/blog.thekarmafarmer.com\/?p=79","title":{"rendered":"Broccoli salad"},"content":{"rendered":"<p>I love broccoli salad from the grocery store deli, but don&#8217;t love the $5.99 a lb. price tag, so I re-created it.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 heads broccoli<\/li>\n<li>1 red onion<\/li>\n<li>1\/2 lb. bacon, unless you&#8217;re a bacon fiend like Yours Truly, then go ahead and make it a full pound<\/li>\n<li>3\/4 c. golden raisins, dried cranberries, craisins, or any combination of them<\/li>\n<li>3\/4 c. sliced almonds, or chopped pecans, or crushed pistachios or&#8230;.well, pick a nut, and use it.<\/li>\n<li>1 c. mayo<\/li>\n<li>1\/2 c. sugar<\/li>\n<li>2 T. white whine vinegar<\/li>\n<\/ul>\n<p>Cook bacon crisp. Chop broccoli florets into bit size pieces.\u00a0 Dice red onion.\u00a0 I like to blanch the broccoli for 1 minute then shock in cold water.\u00a0 Drain well.<\/p>\n<p>In a large bowl, mix mayo, 1\/2 the sugar, and white wine vinegar.\u00a0 Taste, and add the remaining sugar to your liking.<\/p>\n<p>Add broccoli, onion, raisins, nuts and bacon to the dressing, and mix well.\u00a0 Best to let the flavors meld for a couple of hours.\u00a0 Salt &amp; pepper to taste when serving.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love broccoli salad from the grocery store deli, but don&#8217;t love the $5.99 a lb. price tag, so I re-created it.
